Vegan soft baked spelt chocolate chip cookies

D4C309FB-2F3D-4D65-B335-F59897A3BB0EThis ice skating plate cat was just a boring old sleeping cat before I smothered it in these cookies! You can be a festive happy cat, too. Here’s HOW:

Use this! 

1 1/4 cup spelt flour

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 cup maple syrup

3 Tablespoons coconut oil, melted

3 Tablespoons almond butter (or any nut butter)

Handful of chocolate chips, or chocolate RIPS from a bar! I rip.

Do this! 

1. Preheat the oven to 350 F, grease or line two sheet trays with parchment and melt the coconut oil

2. Whisk the melted oil with the other wet ingredients, combine the dry ingredients in a separate bowl, then add the dry to wet and stir together

3. Throw in a handful of chocolate chips/rips/chops, mix that in and then either using a Tablespoon, an ice cream scoop or your hands, form balls of dough and place on the baking trays, about an inch or two apart

4. Bake for 12 minutes and then let cool for about two minutes or seconds or what have you
